I am such a big believer that breakfast breaks the cycle of starving yourself for 8-10 hours which is what happens when you go to bed, you do not eat for so many hours, this is the time for your body to refresh and re group and get ready to start all over again.

So I know that breakfast is really, really important and those sugary cereals just do nothing to get you ready for a new day. So starting your days with some of these Quick and Easy Paleo Breakfasts will definitely make you feel better.

Breakfast is often a skipped meal of the day because you are busy in the morning trying to get to work and get the kids off to school. Which is a really bad thing to be teaching our kids.

It is also the time when people drive-thru fast food or grab a donut, which definitely DOESN’T fit in with your paleo lifestyle.

Instead, try one of these quick and easy paleo breakfasts, many of which you can prepare ahead of time.

Egg Cups

Egg cups are an excellent choice for breakfast since they are healthy, easy to put together, and can be used for meal prep.

If you tend to run out of time due to busy mornings, you can make these ahead of time, then just grab one from the fridge or freezer and heat it up when you need to.

Egg cups are made by pouring scrambled eggs into muffin tins. You then add toppings like veggies and bake them.

When the eggs are cooked through, remove them from the oven, let them cool off, and place in freezer bags or containers.

Baked Egg Cups

Ingredients:

Eggs
Bacon or sausage
Veggies-tomato, spinach, broccoli

Directions:

  • Preheat oven to 350 degrees Fahrenheit
  • Scramble eggs, place in greased muffin tin
  • Add meat and vegetables like – tomato, broccoli, spinach
  • Bake for 30 minutes or until eggs are cooked through
  • Let cool, then freeze in individual bags or containers

Cauliflower Hash Browns

Another breakfast that is great for meal prepping is to make hash browns with cauliflower instead of white potatoes.

You just need to blend up your cauliflower similar to how you make mashed potatoes, but keep it slightly lumpy. I find it best to do in a food Processor as you can see how lumpy and fine you want it and it saves you heaps of time.

Use that to form patties similar to hash browns, coat them in oil and sea salt or other seasonings, then you just bake them.

When they are done baking, you can then put them into freezer bags and I find these particular ziploc bags to be the best for this and grab one each morning to go with your bacon and eggs or other breakfast treats.

Smoothie Bowls are also great for breakfast and they can be fast and on the go meals so you should not have to stop at a fast food outlet to get your donuts make this smoothie bowl up and eith put in a bowl of have in a cup you will feel great starting the day off like this.

Sweet Potato Toast

You can still have your favorite avocado toast even though bread is no longer allowed.

All you need to do is slice a sweet potato and place the slices right in the toaster. If they are thick enough, they won’t break while being toasted.

You can then add toppings like a fried egg, avocado, or peanut butter with banana slices. they now have these really cool banana slices for sale at Amazon which make cutting Bananas so much fun…

Egg Scramble

Many people have a hard time making their eggs and bacon separately, or they don’t know how to make an omelette, but that doesn’t mean you can’t cook eggs each morning.

An easier method is to just make a scramble. It contains all the same ingredients of an omelette, but is a lot easier to do. You just need to scramble some eggs with your preferred omelette filling like bacon/ham and veggies like tomato, spinach, broccoli, then when the eggs are cooked, it is ready to serve.
