Is there anything more comforting on a cold winter day than a big bowl of soup? This Instant Pot Broccoli Cheddar Soup is the perfect comfort food. It’s warm and creamy, with a delicious cheesy flavor. And it’s so easy to make – just dump all the ingredients in the Instant Pot and let it do its thing.

One of the things I love about this recipe is that it’s so easy to make. You just dump all the ingredients in the Instant Pot and let it do its thing. And it’s really healthy too – broccoli is a superfood, adding the other vegetable make is loaded with nutrients. So this soup is not only delicious, but it’s good for you too.

Ingredients Needed To Make the Instant Pot Broccoli Cheese Soup

Ingredients:

  • 2 tbsp butter
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 ½ cup diced onion
  • 4 cups chopped broccoli florets
  • 2 cups water
  • 2 cups heavy whipping cream
  • 5 cloves minced garlic
  • 3 cups shredded cheddar cheese
  • Salt and pepper to taste

How to make the Instant Pot Broccoli Cheddar Cheese Soup

Instructions:

  • Set Instant Pot to Sauté and once it reads Hot, add the butter.
  • Next you will want to toss in onions, carrots, and celery and cook for 5 minutes. Stirring frequently.
  • Once the onion is translucent, turn off Sauté.
  • Stir in broccoli and water.
  • Lock Instant Pot lid into place and set seal to sealing.
  • Press Manual and set time to 5 minutes.
  • Once the timer beeps, you can then release pressure.
  • Remove the lid and select Sauté mode.
Steps to Make Instant Pot Broccoli Cheese Soup
  • Stir in heavy whipping cream and garlic.
  • Slowly add cheese while stirring until cheese melts completely.
  • Turn off Sauté and add salt and pepper to taste.
  • Serve immediately or let cool and freeze for later.
  •  Serve hot with some crusty bread for dipping. Enjoy!

While the recipe is straightforward, it is always nice to have a few different tips and suggestions to make things easier. So here are some of the recipe notes and tips to help you out:

  • If you want to make this soup ahead of time, you can easily do so. Just follow all the instructions up until step 6. Then, instead of Pressure Cooking, you will just press the Cancel button and let the pot release the pressure naturally. Once the pressure is released, remove the lid and stir in the cream and cheese. You can then either ladle the soup into individual containers and freeze or freeze the entire batch. When you are ready to eat it, just thaw and reheat on the stovetop or in the microwave.
  • This soup can also be made in a Crockpot. Just follow all the instructions up until step 4. Then, instead of Pressure Cooking, you will just set your Crockpot to Low and cook for 6-8 hours or on High for 3-4 hours.
  • If you want a little bit of a crunch in your soup, you can stir in some crumbled bacon or chopped up ham when you add the cream and cheese.
  • If you are not a fan of broccoli, you can easily substitute with cauliflower or even kale. Just make sure that you adjust the cooking time accordingly.
  • Serve with your Instant Pot Brussels Sprouts and Bacon and what a nutritious and healthy meal you have. Oh and don’t forget your Spinach Banana smoothie, yum!

Variations to try:

Like with many recipes there will always be variations to try. Here are a few suggestions.

  • Try using different types of cheese. Gruyere, Gouda, and Havarti are all great choices.
  • For a bit of a spice, try adding in a pinch of cayenne pepper or red pepper flakes.
  • If you want to make this a complete meal, stir in some cooked chicken or turkey.

I don’t have an Instant Pot. Can I still make this soup?

Absolutely! This soup can just as easily be made on the stovetop. Just follow all the instructions up until the step when you need to pressure cook it. Then, instead of Pressure Cooking, you will just simmer the soup on low until the veggies are cooked through. From there, you can either continue with the recipe or freeze the soup or you can make it in a crockpot.
